Banana Bread

  So a few years ago my mom was on a health kick and came up with this delicious, more nutritious recipe for a very sweet treat.  Like I typically double it cause we literally can't stop the entire batch from vanishing whenever I make it...

  Ingredients:
  • 1 c wheat flour
  • 3/4 c blended oats flour
  • 2 tsp baking powder 
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2-4 mashed ripe bananas
  • 1/4 c honey 
  • 1/3 c softened butter
  • 2 tbsp milk
  • 2 eggs
  • *optional: When you're not totally feeling the whole health-kick thing, CHOCOLATE CHIPS.  Holy freaking delicious.  When it's warm out of the oven you lather on some butter and whipped cream and oh my yum.  OR also optional 1/4 c chopped nuts
  Directions:
  1. Preheat oven to 350 degrees
  2. In large bowl mix 1/2 the flour, baking power & soda, and salt.  Add mashed bananas, milk, and butter.  Beat till blended with an electric mixer on low, then on high for 2 minutes.  Add eggs and    other half of flour and beat till blended.  Stir in chocolate chips or nuts if desired.
  3. Pour batter into greased pan.  You can do 1 of those big pans so you can serve it in squares or 1 / more than 1 bread loaf pan for whatever-sized slices... whatever floats your boat.  
  4. Depending on what sized pan, times may vary.  Cook for 50 minutes {to be safe, it probably won't be ready by now but we've all burned things before, so rather not risk it}, then you know the deal.  Check with a toothepick and see if it comes out clean, if not, back in the oven it goes.  Typically recipe books will say it should take 55-60 minutes.
  5. Cool 10 minutes.
  6. Carefully remove from pan and cool on a wire rack just long enough that you won't burn your tongue.
  7. Finally...The whole sha-bang of pure ENJOYMENT.
