A yummy, low-cal summer recipe, courtesy of Betty Crocker's Italian Cooking .
"Ingredients:
- 2 c water
- 1/3 c sugar
- 1/2 c fresh orange juice
- 12 very ripe strawberries, mashed well {1/2 c}
Directions:
- Heat water to boiling in 2-quart saucepan. Stir in remaining ingredients except vanilla. Boil 3 minutes, stirring constantly. Remove from heat; stir in vanilla.
2.Freeze in icecream maker as directed by manufactuer. OR cool to room temperature, then pour into ungreased loaf oan, 9x5x3 inches, and freeze 1 1/2 to 2 hours or until mushy in center. Stir mixture, freeze anout 1 hour longer, stirring every thirty minutes, until firm. Stir again before serving.
3. Serve in chilled dessert dishes. Or cut into 1/2-inch chunks and place in place in serving bowl. Cover and freeze until ready to freeze. "
When you have lots of fruit to use and a sweet tooth, this is a good way to go. This wasn't too difficult and the kids enjoyed it. Not to mention the vitamins inside contribute to good health.
