It's officially 6 days till school starts, but summer is not over yet. That means we have to be creative with lunch before it's too late and we're eating PB&Js every day.
Although it's hard to eat healthy like I want to when other people are contantly cooking for me, when I do have the chance to make my own meals, I have fun with my veggie-filled, dairy-free, meatless foods.
This one I came up with scratch with the ingredients we had, and considering my 14-year-old brother asked me to make it again, it must be good!
*sorry I didn't measure. just add whatever amount pleases you so it doesn't fall out of the taco.*- Tortillas {at least 2 for one whole quesadilla}
- Refried beans {I usually mix with taco seasoning, cumin, and salsa}
- Brown rice {you can add taco sauce for flavor}
- Frozen corn
- Bell pepper
- Onion
- A dash of minced garlic
Heat olive oil with minced garlic, then saute` corn and sliced bell peppers/onions. Spread beans thickly on the tortilla, then add rice and sauted vegetables. If you have a quesadilla maker, make it like that, if not I'm sure it would work with olive oil on a pan. Serve with salsa {I liked pineapple-mango!}
