Blender Pancakes

  Yeah, so I have this terrible craving for sweet delicious food and unfortunately, often times sweet delicious = not so nutritious.  But it doesn't have to be like that all the time.  And I figure, with swimsuit season coming up fast in Arizona, it's probably better to make the effort to treat my body well, even if I don't wanna give up my sweet tooth.  Therefore, today's breakfast when Mama's in bed sick & its a Saturday morning & the younger kiddos feel like helping you in the kitchen....


Blender Pancakes

  • 1 cup whole grains {wheat, buckwheat, etc.}
  • 2 cups milk
  • 2 eggs
  • 1/3 cup canola oil
  • 1 tsp salt
  • 1 tsp sweet spice blend
  • 1 tbs honey
  • 1 tbs baking powder
  Blend the whole grains and 1 cup of the milk on high for 2 minutes.   Add the second cup of milk and blend for another 2 minutes on high.  Then add everything else except for the baking powder and blend till well-mixed, and only gently mix in the baking powder right before cooking.  Voila.  Ready for the griddle.

  See, it's easy and nutritious.  We even added blueberries, and it tasted pretty dang good.
